Kimchi is representative traditional food of Korean.

Kimchi is mixed together corned  vegetables of Chinese cabbage, radish etc. seasoned with cayenne, onion, garlic, ginger and so on. And there is much kinds of Kimchi according to method or material.

Because of climate that four seasons is clear, soused Chinese cabbage to eat vegetables in midwinter.  And developed gradually, became nowaday Kimchi.

It need much vegetables and condiment to make Kimchi, but 8 vegetables is used most.

This eastern vegetable gardening includes cooking process that make Kimchi beside harvest.

Now, introduce Kimchi garden to practical garden program.

Important vegetables kind that come to Kimchi are paechu(Korean  cabbage), mu(radish), pa(leek), minari(korean watercress) and seasonings are kochu(chili), manul(garlic), saenggang(ginger),  kat(indian mustard).
Want that grow all 8 kinds, but the most important material is paechu(Korean  cabbage).
Paechu is divided by spring cultivation and fall cultivation.
The Korea does much fall cultivation to eat Kimchi in winter.
Fall cultivation can harvest to early November sowing at mid-August now. (For reference, Korean Climate Zone is 7b.)
Fresh material is important first of all to make kimchi tastily.
When ate inner leaves of fresh Paechu, taste must be sweet and tasty. And juicy and fresh paechu should be hard when press white part of trunk down with finger.
The Korean speaks a person who make well kimchi that Sonmat(taste of hand) is good specially. Why? All processes though is handmade tasty.

Growing Paechu(Korean cabbage)

Paechu is vegetables that like cool climate.

Suitable temperature is 18¡­20 ¡É in growth. In period that bulb up, 15¡­18 ¡É cool climate is good than growing period.

Compacted species of inside is preferred in the Korea.

If sunlight is enough and nutritive conditions is good, auxin of plant hormone is created in plant. And this auxin moves to back of leaf and cell of back of the result leaf grows greatly than surface, leaf stands and bulb up.

Sunshine is enough the Korean fall!

Root of Paechu is distributed comparatively deeply and extensively but must consider that is weak in dry because rootlets that range comparatively lightly on the soil surface.

When grow Paechu, must try lime by manure given at sowing time.
